Ingredients
- 1 medium onion chopped
- 1/2 lb. Italian sausage; casing removed
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 cup lentils; sorted and rinsed
- 1 cup chopped canned stewed tomatoes (with juices)
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon ground cumin
- 1 bay leaf
- 1 medium carrot, sliced
- 1 stalk celery, chopped
- Fresh spinach

Step 1
Brown sausage in large sauce pan; drain fat. Add onions and garlic to sausage; cook over medium heat. Stir in broth, lentils, tomatoes (with juices), Worcestershire sauce, oregano, pepper, cumin and bay leaf. Bring to a boil, then reduce heat. Cover and simmer for 15 minutes.
Add the carrots and celery. Return to a boil, then reduce the heat. Cover and simmer about 20 minutes or until lentils and vegetables are tender. Add fresh spinach and remove bay leaf before serving.
Makes 4 main-dish servings.
