Tomato & Mozzarella Salad

- 2 Ripe Roma Tomatoes Diced
- 8 oz Mozzarella Cheese Shredded
- 2 T Red Wine Vinegar
- 1 t Dijon Mustard
- 1 T Salt
- 1/2 t Ground Pepper
- 1/2 t Sugar
- 1/2 C EVOO
Large Bowl Combine Tomatoes & Cheese *DO NOT TOSS, ALLOW TO SIT 5 MINUTES*.
Small Bow. Whisk All Other Ingredients * ADD EVOO SLOWLY*.
Pour Liquid Over Tomatoes & Cheese and Toss Gently.
Sprinkle with 1 T Basil.
