Corn, Pepper & Black Bean Salad

Ingredients
- Salad
- 1 can (450 grams/15 oz.) black beans, rinsed and drained
- 1 can (458 grams/15.25 oz.) corn, drained
- 1 can (435 grams/14.5 oz.) diced tomatoes with green chilies, drained
- 1 red bell pepper, seeded and diced
- 1/2 small red onion, diced
- 50 mL (1/4 cup) cilantro, finely chopped
- Dressing
- 125 mL (1/2 cup) canola oil
- 5 mL (1 teaspoon) chili powder
- Juice of 1 lime
- Salt and pepper, to taste

Preparation
Step 1
Combine all salad ingredients in a medium-size bowl.
In a separate small mixing bowl, combine all dressing ingredients with a whisk.
Pour dressing over salad mixture, gently tossing with a large spoon. Season with additional salt and pepper to taste, then place in the refrigerator until ready to serve
