Corn, Pepper & Black Bean Salad

  • Salad
  • 1 can (450 grams/15 oz.) black beans, rinsed and drained
  • 1 can (458 grams/15.25 oz.) corn, drained
  • 1 can (435 grams/14.5 oz.) diced tomatoes with green chilies, drained
  • 1 red bell pepper, seeded and diced
  • 1/2 small red onion, diced
  • 50 mL (1/4 cup) cilantro, finely chopped
  • Dressing
  • 125 mL (1/2 cup) canola oil
  • 5 mL (1 teaspoon) chili powder
  • Juice of 1 lime
  • Salt and pepper, to taste



Step 1

Combine all salad ingredients in a medium-size bowl.
In a separate small mixing bowl, combine all dressing ingredients with a whisk.
Pour dressing over salad mixture, gently tossing with a large spoon. Season with additional salt and pepper to taste, then place in the refrigerator until ready to serve
