Ingredients

  • 6 TBS margarine, softened
  • 6 TBS butter, softened
  • 1 1/2 cups sugar
  • 2 eggs, separated
  • 1 cup (about 3 large) bananas, mashed
  • 1 tsp vanilla
  • 2 1/4 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup sour milk (just add a splash of lemon juice to regular milk)

Step 1

1) Preheat oven to 350 degrees F. Prepare a tube or bundt pan with cooking spray. In a large mixing bowl, cream together margarine, butter and sugar with a mixer on medium until light and creamy; about 5 mins.

2) Add egg yolks one at a time and blend well after each addition.

3) Add bananas and vanilla and beat well.

4) Sift together the flour, baking powder and baking soda. Alternate adding dry ingredients in 3 parts with the milk in 2 parts to the mixture and mix until well combined.

5) In a separate bowl, whip egg whites until stiff.

6) Fold egg whites into batter. Pour into prepared pan and back for 45 - 60 mins.
