Calas (New Orleans Breakfast Fritters)

Ingredients

  • 2 cups of cooked rice
  • 2 eggs beaten
  • 6 Tablespoons of sugar
  • 2 teaspoons of baking powder
  • 1/2 cup of flour
  • 1/2 teaspoon of vanilla
  • 1/8 teaspoon of nutmeg
  • Dash of cinnamon
  • Oil for frying
  • Powdered sugar

Preparation

Step 1

Mix the eggs and cooked rice together.
In a separate bowl combine the sugar, baking powder, flour, vanilla and spices. Slowly, blend the second mixture into the rice/egg mixture until a thick batter forms.
Heat the cooking oil to 350 degrees.
Carefully spoon in tablespoons of the mixture into the oil.

Cook until browned – remove from oil and sprinkle with Powdered sugar.

Serve Warm
