  • 2 Tbs ketchup
  • 1 Tbs brown sugar
  • 2 Lg eggs
  • 2 Tbs tomato paste
  • 1 Tbs Worcestershire sauce
  • 1 tsp dry oregano
  • Kosher salt and pepper
  • 1/2 C dry bread crumbs
  • 1 Small onion, finely chopped
  • 1/2 C fresh flat-leaf parsley, chopped
  • 3/4 lb ground beef chuck
  • 3/4 lb ground pork

Step 1

Heat oven to 375*F. Line a rimmed baking sheet with foil. In a bowl, combine the ketchup and brown sugar, set aside.

In a large bowl, whisk together the eggs, tomato paste, Worcestershire, oregano, 3/4 tsp salt and 1/2 tsp pepper; stir in the bread crumbs. Add the onion and parsley and mix to combine.

Add the beef and pork and mix until just incorporated. Transfer the mixture into the prepared baking sheet and shape into a 9 x 3 1/2" loaf. Brush loaf with the ketchup mixture. Bake until the internal temperature registers 150* F, 40-45 minutes. Let rest 5 minutes before slicing.
