Squash Fritters

Ingredients

  • 6 Yellow squash
  • 2 eggs
  • 1/4 t. pepper
  • 1 small onion (diced)
  • 1/2 cup cracker crumbs

Preparation

Step 1

Cook squash, drain and mash
Combine squash with eggs, cracker crumbs, pepper and onion

Heat vegetable oil to a depth of 2 inches in a heavy saucepan to 375 degrees

Drop by T. into oil; fry until golden brown…turning once.


Drain on paper towels
