Ingredients
- 1 pkg. SF pistachio pudding mix
- 1 cup low fat Cool Whip
- 2 cups low carb vanilla yogurt
- 1/4 cup chopped walnuts
- 2 T. shredded coconut (optional)
- 1 3/4 cup crushed pineapple in 100% juice, no sugar added

Preparation
Step 1
Blend together pudding mix, yogurt and pineapple with juice until pudding mixture dissolves. Gently fold in whipped topping, nuts and coconut. Chill and serve.
