Curried Potato Salad

Ingredients

  • 2 LBS Red Bliss potatoes, peeled & cut into 1" pieces
  • 3/4 C plain 2% Greek yogurt
  • 2 tsp Madras or regular curry powder
  • 1-1/2 tsp hot pepper sauce (such as Tobasco)
  • 3/4 tsp salt
  • 3/4 C shredded carrots
  • 1/2 C thinly sliced green onions, divided
  • 1/3 C thinly sliced celery
  • 2 TBL chopped unsalted cashews

Preparation

Step 1

place potatoes in med. saucepan
cover w/ cold water
bring to boil
reduce heat & simmer 10 min or until tender
drain & cool

combine yogurt & next 3 ingredients (through salt)
stirring w/ whisk

place cooled potatoes in lg. bowl
add carrots, 5 TBL green onions, celery & yogurt mixture
toss gently to combine

sprinkle w/ remaining 3 TBL green onions & cashews

serve chilled
