Avocado and Corn Salad

Ingredients

  • 6 cobs of corn, husked
  • 1.25 cups (310mL) finely diced red onion
  • 2 limes, zested and juiced
  • 1 tsp (5mL) salt
  • 1 small red or green finger chili, finely diced
  • 3 large avocados, medium dice
  • 1/4 cup (60mL) Sensations by Compliments Salsa Verde
  • 1/4 cup (60mL) finely chopped fresh cilantro

Preparation

Step 1

1. Heat BBQ to high. Grill the corn until lightly charred, about 5 to 7 mins. Cool, then slice the kernels from teh cob into a bowl. Stir in the remaining ingredients and serve.
