Black Beans and Rice

Ingredients

  • 1 Cup quick cooking brown rice
  • 1 1/4 cups of water
  • 2 t. margarine
  • 3 cloves, garlic minced
  • 1 t. salt
  • 1 T hot sauce
  • 1/2 cup salsa
  • 1 1/2 cups canned black beans drained
  • 1/2 cup shredded Monterey Jack Cheese
  • 1/2 white onion chopped
  • 1 additional cup salsa

Preparation

Step 1

Combine rice, water, margarine garlic, salt, hot sauce and 1/2 cup salsa in a microwave safe dish.

Microwave covered on HIGH for 4 to 5 minutes or until rice is tender and stir

Add black beans to mixture
Microwave for 2 to 3 minutes more, stirring once.

Pour into individual serving dishes

Top each with cheese, remaining salsa and onion
