Black Beans and Rice

Ingredients
- 1 Cup quick cooking brown rice
- 1 1/4 cups of water
- 2 t. margarine
- 3 cloves, garlic minced
- 1 t. salt
- 1 T hot sauce
- 1/2 cup salsa
- 1 1/2 cups canned black beans drained
- 1/2 cup shredded Monterey Jack Cheese
- 1/2 white onion chopped
- 1 additional cup salsa

Preparation
Step 1
Combine rice, water, margarine garlic, salt, hot sauce and 1/2 cup salsa in a microwave safe dish.
Microwave covered on HIGH for 4 to 5 minutes or until rice is tender and stir
Add black beans to mixture
Microwave for 2 to 3 minutes more, stirring once.
Pour into individual serving dishes
Top each with cheese, remaining salsa and onion
