Ingredients
- Cake:
- 1 cup quick oats {3oz}
- 1.5 cups boiling water
- 2 eggs, beaten
- 1/2 cup butter
- 1 cup brown sugar {8oz}
- 1 cup white sugar
- 1 tsp. vanilla extract
- 1-1/3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Frosting:
- 12 tablespoons butter
- 1/2 cup canned milk
- 1 cup brown sugar {8oz}
- 2 cups coconut {240g}
Preparation
Step 1
Mix oatmeal and boiling water and let cool. Stir in beaten eggs. Cream butter and sugars and vanilla.
Mix together dry ingredients and add alternately with oatmeal mixture to butter mixture. Pour into 9x13” pan and bake at 350°F for 35 minutes. Make frosting by melting butter, brown sugar and milk, add coconut and stir well. Pour over hot cake and put under broiler until melted and browned.
