Grilled Mushroom and Ricotta Pizza

Ingredients

  • 1 Tbsp olive oil
  • 1 oz Cremini mushrooms, trimmed and sliced
  • 1 pizza dough
  • 1 garlic clove
  • 1/4 tsp dried oregano
  • 1/2 cup ricotta
  • 1/4 cup fresh basil leaves
  • Flour for dusting
  • Salt to taste

Preparation

Step 1

1. Heat one side of grill to medium heat and brush grate with oil. In a large bowl, toss the mushrooms and 1 Tbsp oil.
2. Roll out dough on a cookie sheet.
3. Top dough with mushrooms, garlic and oregano. Drop dollops of ricotta over the pizza. Drizzle with oil and sprinkle with salt.
4. Slide pizza on grill and cook until pizza is crisp and golden, 2-4 minutes. Slide pizza onto unheated side and cook 3-5 minutes or until cheese is melted and veggies are tender.
5. Top with basil and additional salt and oil as necessary.
