JANINE'S FAVORITE PIZZA

And double recipe for a 9x13" pan
Ingredients
- 1 teaspoon olive oil
- 1/2 lb. chicken italian sausage
- 1/2 cup onion, sliced {2.5oz}
- 4 oz. mushrooms, sliced
- Green and red bell pepper, diced
- Broccolli florets
- 1 cup pizza sauce
- Pineapples chunks
- 1/2 cup black olives, sliced
- 8 oz. mozzarella cheese, shredded
- 1 egg
- 1/2 cup milk {4.25oz}
- 1/2 tablespoon olive oil
- 1/2 cup whole wheat pastry flour
- 1/4 teaspoon salt
- 1/2 oz. Parmesan, grated
Preparation
Step 1
Preheat oven to 400°F.
Heat oil in large skillet over med-heat. Add sausage and cook for 3 minutes, or until browned and cooked through, breaking up meat as it cooks. Add onion, mushrooms, peppers and broccolli and cook 2 minutes, until soft. Add pizza sauce, pineapple and olives and bring to a simmer, about 2 minutes.
Remove from heat and transfer sauce to the bottom of a 9x9” baking dish. Top with mozzarella cheese.
In a medium bowl, whisk together egg, milk and oil until blended. Whisk in flour and salt until well blended. Pour mixture over sauce in pan. Sprinkle with Parmesan. Bake 25 minutes, or until golden brown. Let stand for 5 minutes before serving.
