Cheesy Fish and Vegetables

Ingredients

  • 2 (10 oz) packages frozen broccoli, cauliflower and carrots in cheese sauce
  • 1 lb (about 4) catfish fillets or Orange Roughy fillets
  • 1/4 t. lemon-pepper seasoning
  • 1/4 cup chicken broth

Preparation

Step 1

Cook vegetables according to package directions; set aside

Sprinkle fish with lemon-pepper seasoning; place in a single layer in a large skillet.

Add broth; bring to a boil

Cover, reduce heat and simmer 10 minutes or until fish flakes easily with a fork.

Remove to a serving platter with a slotted spoon, reserving drippings; keep warm.

Cut open bag of cooked broccoli; cauliflower and carrots; pour into skillet with reserved drippings.

Cook over medium heat until heated.

Spoon vegetables and sauce over fish.
