Ingredients

  • 2 cans chili with beans, 15 oz. each
  • 14 strips fully cooked bacon, chopped
  • 4 eggs
  • 4 green onions, chopped

Preparation

Step 1

1. In large skillet, heat chili over medium heat. Put bacon on paper towel; microwave for 30 seconds or until crisp. Fold bacon into chili. Flatten chili mixture with back of a spoon. Make 4 indentations in the chili. Break 1 egg into each indentation.

2. Cover skillet and cook for 12 mins or until eggs are cooked to taste. With large spoon, scoop up 1 egg with a portion of chili and bacon for each serving. Sprinkle with green onions.
