Lemon Zest Pizzelle

Ingredients

  • 6 eggs
  • 1 1/2 cups white sugar
  • 1 cup butter, melted
  • 1 tsp lemon zest
  • 1 tsp vanilla
  • 3 1/2 cups all purpose flour
  • 4 tsps baking powder

Preparation

Step 1

1. In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, lemon zest and vanilla. Stir in the flour and baking powder.
2. Drop batter by teaspoonfuls on the the center of the patterns, close the lid and cook for about 30 seconds.
3. Carefully remove and cool on wire racks
