This is a great low calorie pesto.

Ingredients

  • 2 cups loosely packed fresh basil
  • 1/4 cup fat-free chicken or vegetable broth
  • 2 cloves garlic
  • 1 tablepoon olive oil
  • 1 1/2 teaspoon lemon juice
  • 1/8 teaspoon freshly ground black pepper
  • 1 ounce freshly grated parmesan or romano cheese
  • 8 ounces spaghetti, cooked

Preparation

Step 1

In a food processor, puree basil, broth, garlic, oil, lemon juice and pepper. Stir in parmesan and toss with hot spaghetti.

To make tossing the pasta easier, stir in a tablespoon or so of the pasta cooking water.

Diced tomatoes are a great addition.
