Apple Sandwiches

Ingredients

  • 2 unpeeled apples
  • Juice of 1 orange
  • 8 oz cream cheese, softened
  • 1/2 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 loaves cinnamon raisin bread
  • 1/2 cup crushed peanuts

Preparation

Step 1

1. Core apples and cut each into six rings. Dip in the orange juice to prevent browning.

2. Mix the cream cheese, brown sugar and vanilla in a bowl and mix well. Spread cream cheese mixture over the slices of one loaf of bread. Put one apple slice on each slice of bread and sprinkle with the peanuts. Top with the remaining bread. Chill covered for 2 to 12 hours. Cut into halves diagonally.
