Ingredients
- 1 cup brown lentils rinsed and picked
- 2 strips bacon, cut 1/4 inch pieces
- 1 med onion finely chopped
- 2 carrots, finely chopped
- 2 garlic cloves minced
- 3 tbsp. red wine vinegar
- 1 tbsp. Dijon mustard
- 3 tbs olive oil
- salt and pepper
Preparation
Step 1
In medium pan combine lentils and 4 cups of water bring to a boil, reduce heat, cook until tender, but not mushy. 15 to 20 mins. Drain well.
Cook bacon until crisp. Drain.
Add onions and carrots to rendered fat until tender. Drain, add garlic, cook for 2 mins. In med bowl whisk vinegar, mustard and oil, salt and pepper add lentil and onion mixture and bacon.
