Ingredients
- 5-7 LB pork shoulder
- 1 onion, quartered
- 1 Tbsp chili powder
- 1/2 brown sugar
- 4 garlic cloves, peeled
- 1 tsp dried oregano
- 2 tsp ground cumin
- 1-2 Tbsp salt
- Ground pepper
- 3 Tbsp olive oil
- 2 Tbsp white wine vinegar
Preparation
Step 1
Preheat oven to 300 degrees
In food processor, pulse until all ingredients are fully combined. Rub over and into crevices of pork. Place in Dutch oven and cover tightly. Cook 6-7 hours, turning roast every hour.
When roast falls apart, increase oven to 425 and cook 20 minutes. Remove and let sit 15 minutes.
Pull apart with forks and pour pan juices over meat to ensure meat stays tender.
