Pimento Grilled Cheese with Bacon and Heirloom Tomato

Ingredients
- Whole grain bread (I used Ezekiel)
- Olive oil
- Pimento cheese spread
- Yellow American cheese
- Cooked bacon strips
- Yellow Heirloom tomatoes
- Pinot Grigio Italian wine vinegar (or similar)
- Slice Heirloom tomato into rounds and drizzle with wine vinegar

Step 1
Heat a skillet over medium to medium low. Brush olive oil onto one side of a slice of bread and place in hot skillet. Place American yellow cheese on top and then place 2-3 slices of cooked bacon strips on top of the cheese. Take a second slice of bread and spread pimento cheese on one side and then press on top of american cheese and bacon in skillet. Brush the top with olive oil. Flip over once browned and cook the other side until browned and cheeses are melted. Remove from skillet, lift one side of grilled bread and place a slice of Heirloom tomato on top. Replace top piece of grilled bread and cut in half. Serve with chips or salad.
