Ingredients
- 2 tablespoons butter
- 1/2 cup confectioner's sugar
- 1 large egg white
- 1 teaspoon vanilla
- 1/4 cup all-purpose flour
Preparation
Step 1
1. Preheat oven to 376 degrees F.
2. Grease 2 small cookie sheets.
3. In 1-quart saucepan, heat butter over low heat until melted.
4. Remove saucepan from heat.
5. With wire whisk, beat in confectioner's sugar, egg white and vanilla, until blended.
6. Beat in flour until batter is smooth.
7. Drop 1 heaping teaspoon of batter onto cookie sheet.
8. Repeat with another teaspoon batter, at least 4" away from first.
9. With small metal spatula, spread batter evenly to form two 3" rounds.
10. Bake about 4 minutes or until cookies are lightly golden.
11. Loosen both cookies with metal spatula.
12. Working one cookie at a time, place fortune across center of hot cookie.
13. Fold hot cookie in half, forming a semi-circle, and press edges together.
14. Quickly fold semi-circle over edge of bowl to create fortune cookie shape.
15. repeat with other cookies.
16. Let shaped cookies cool completely on wire rack.
