Potato Skins

Ingredients

  • 4 russet potatoes
  • vegetable oil (bacon grease too, if you have it)
  • bacon
  • cheddar cheese
  • sour cream
  • green onions

Preparation

Step 1

Preheat oven to 425 degrees.

Wash potatoes and rub with vegetable oil. Place on baking sheet and cook for 1 hour or until fork tender.

Remove from oven and cut in half, horizontally. Scoop out some of the insides. Brush front and back with melted bacon grease, salt and pepper, and place face down and bake 7 minutes. Turn over and bake another 7 minutes.

Place shredded cheese inside the potato skin and top with chopped bacon bits. Bake until cheese melts. Top with sour cream and green onions.
