Lemon-Cornmeal Cookies

Ingredients

  • 1 pkg (8.5 oz) Jiffy corn muffin mix
  • 1 egg
  • 1/4 cup milk
  • 3 tbs sugar
  • 1 tbs flour
  • 1 tsp lemon zest
  • 2/3 cup chopped pecans

Preparation

Step 1

Preheat oven to 375 degrees. Line large baking sheets with parchment paper.

In a medium bowl, combine everything except the nuts.

Drop batter by teaspoonfuls, 2" apart, onto prepared baking sheets. Sprinkle with pecans.

Bake for 7 minutes, or until browned around the edges. Let cool on parchment paper on a wire rack for 2 minutes, or until cookies can easily be removed.

Remove from parchment paper, and cool completely on a wire rack(about 30 minutes.)
