Ingredients

  • 2 T olive oil
  • 2 Vidalia onions, chopped
  • 1 green pepper, finely chopped
  • 2 cloves garlic - minced fine
  • 6 or 7 chicken breasts, cooked
  • 1 cup ham
  • 12 tiny pork sausages - about two packs of 6 hot Italian sausages—one sweet, one hot
  • 2 large cans tomatoes un-drained
  • 1 cup raw white rice
  • 1 1/2 cup chicken broth (1 can)
  • 1/2 t thyme
  • 1 T chopped parsley
  • 1/4 t chili powder (or more)
  • Salt
  • Pepper

Preparation

Step 1

Sauté onion, pepper and garlic until tender.
Put in pot
Sauté chicken and ham (if you have time, otherwise just put in pot)
Sauté sausage until done - cut into pieces
Add tomatoes and their liquid, broth, thyme, parsley chili salt and pepper. I cook over low heat for as long as I can and add rice and hour or two before serving. You can also put the entire mixture into a casserole, cover and bake for 1 1/2 hours.
