- 3 medium red potatoes
- 2 c. water
- 1 small onion
- 3 T. butter
- 3 T. flour
- red pepper flakes
- black pepper
- 3 c. milk
- 1/2 t. sugar
- 1 c. shredded Cheddar cheese
- 1 c. cubed ham

Step 1
Peel potatoes and cut into 1 inch squares. Bring water to boil in large sauce pan. Add potatoes and cook until tender. Drain, reserving liquid. Set potatoes aside. Measure 1 cup cooking liquid, adding water if necessary, set aside. Peel and chop onion. Melt butter, add onion; cook until onion is translucent and tender. Add flour, season with pepper and pepper flakes to taste. Cook 3-4 minutes. Gradually add potatoes, reserved 1 cup cooking liquid, milk, sugar to onion mixture; stir well. Add cheese and ham. Simmer over low heat for about 30 minutes.
