English Muffin with Pineapple Cheese Topping

• 1/3 c pineapple, crushed and drained
• 1 c low-fat cottage cheese
• 8 English muffins, split in half, toasted
• 8 T HeartSmart Granola (see recipe at right)

Preparation

Step 1

Mix crushed pineapple with cottage cheese. Place one tablespoon cottage cheese-pineapple mixture on each muffin half. Sprinkle half with 1 1/2 teaspoons HeartSmart Granola.
