Ingredients
- trecchi (or penne) pasta
- hen of the woods mushrooms
- pine nuts
- arugula
- lemon
- walnuts
- ricotta cheese
- olive oil
Preparation
Step 1
Boil pasta and set aside.
Squeeze fresh lemon juice, 4 tbsps. Chop up walnuts. Slice up ricotta cheese. In processor, blend lemon juice, walnuts, and ricotta cheese into a pesto.
Lightly toast pine nuts. Saute mushrooms in olive oil with pine nut in a heavy skillet.
Blend mushrooms, pine nuts with pesto. Add arugula to pasta and add pesto and mix well.
Add salt and pepper to taste.
