Heart Smart Hash Brown Potatoes
- 3 medium baking potatoes, washed, grated with skins on
- 2 tablespoons grated onion
- 1/4 teaspoon salt
- pepper tp taste
- 1 tablespoon vegetable oil
- 1 tablespoon parsley, washed, chopped
In a large bowl, mix potatoes, grated onion, salt, and pepper. In a nonstick pan, heat oil over medium high heat. Put potatoes in skillet. Cover and cook over medium low heat until bottom is brown. Turn and brown on other side. Sprinkle parsley on top and serve.
