Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Pinch of ground cinnamon
- 4 tablespoons cold margarine or butter
- 3 large eggs, slightly beaten
- 6 ounces semi-sweet chocolate mini chips
- 1 cup walnuts, toasted and coarsely chopped
- 1 teaspoon vanilla extract
Preparation
Step 1
1. Preheat oven to 30 degrees F.
2. In large bowl, mix flour, sugar, baking power, salt and cinnamon.
3. With pastry blender or two knives, cut in margarine until mixture resembles crumbs.
4. Spoon 1 tablespoon beaten eggs into cup; reserve.
5. Add chocolate chips, walnuts, vanilla and remaining beaten eggs to flour mixture; stir until evenly moistened.
6. With hand, knead mixture a few times in bowl until dough forms.
7. On floured surface, with flour hands, divide dough in quarters.
8. Shape each quarter into a 9" x 2" log,
9. Place logs crosswise, 4 inches apart, on 2 large cookie sheets.
10. With pastry brush, brush tops and sides of logs with reserved egg.
11. Bake 25 minutes.
12. Cool logs on cookie sheet on wire rack for 10 minutes.
13. Place 1 log on cutting board.
14. With severed knife, cut warm log crosswise into 1/2" thick diagonal slices.
15. Place slices upright, 1/4" apart, on cookie sheets.
16. Repeat with remaining logs.
17. Bake slices 15 minutes to allow biscotti to dry out.
18. Cool completely on sheets on wire racks.
