Ingredients
- Mix together thoroughly:
- 1 cup soft shortening
- 2 cups brown sugar
- 2 eggs
- Stir in:
- 1/2 cup cold coffee
- Sift together and stir in:
- 3 1/2 cups sifted flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- Mix in:
- 2 cups well-drained mincemeat
Preparation
Step 1
Chill at least 1 hour. Drop rounded teaspoons about 2 inches apart on an ungreased Silpat lined baking sheet.
Bake until set, just until when touched with a finger almost no imprint remains, about 8 to 10 minutes.
Bake at 400 degrees.
Yields about 6 dozen 2 1/2 inch cookies.
