Ingredients
- 2 tbsp olive oil
- 6-8 oz boneless chicken breasts, cut in 1" pieces
- 2 medium potatoes, cut in chunks
- 14 oz can tomato sauce
- 14 oz can whole tomatoes crushed or crushed tomatoes
- 2 cloves minced garlic
- 1/2 green pepper chopped
- 1/2 spanish onion chopped
- 1 tsp dried oregano
- 2 bay leaves
- 1 10 oz can whole sliced mushrooms (optional)
- 1/4 cup red or white wine (optional)
- Salt and pepper

Step 1
Prepare vegetables and chicken
Saute onion and green pepper in oil. After vegetables soften, add garlic and chicken until chicken is cooked.
Add tomato sauce, tomatoes, oregano, bay leaves, salt and pepper and potatoes (add mushrooms if using)
Simmer for 30 mins.
