Seafood/Poached Salmon with Pomegranate Relish

Ingredients
- Salmon
- 2 shallots, chopped
- 2 tsp olive oil
- 1/2 cup white wine
- 4 cups low salt chicken broth
- 2 tbsp lemon juice
- 2 tbsp chopped fresh thyme
- 2 tbsp chopped fresh dill
- 2 tbsp chopped fresh parsley
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- 2 pounds salmon fillets, skinned
- Pomegranate Relish
- 1/2 cup pomegranate seeds (1 large)
- 2 tbsp chopped sweet onion
- 1/4 cup toasted chopped walnuts
- 1 tbsp orange zest
- 1 tbsp olive oil
- 1 tbsp lemon juice
Preparation
Step 1
Salmon
Saute shallots in olive oil in large skillet over medium heat 3-5 minutes or until browned. Stir in wine. Add chicken broth and next 6 ingredients and bring to a boil.
Sprinkle cayenne pepper and next 3 ingredients over salmon. Add salmon to broth and simmer over medium heat for 5-10 minutes or until fish flakes easily when tested with a fork. Serve with Pomegranate Relish.
Pomegranate Relish
Combine all ingredients in a small bowl. Season with salt and pepper to taste and serve with salmon.
