Ingredients

  • 4 croissants
  • 6 Tbs softened cream cheese
  • 4 slices ham
  • 9 oz. jar orange marmalade
  • 1/3 c. orange juice
  • 5 large eggs
  • 1 c. half-and-half
  • 1 tsp. almond extract
  • 1/4 cup toasted almonds
  • strawberries or raspberries and mandarin orange sections for garnish

Step 1

Cut the croissants in half lengthwise and spread the softened cream cheese over the bottom halves. Place a slice of ham on each one, then transfer to a 12 x 9-inch ovenproof dish. Combine the marmalade and orange juice and spread over the ham, reserving enough to be used as a glaze for the tops of the croissants. Place the tops on the croissants. In a medium bowl, beat the eggs, half-and-half, and almond extract until well blended, then pour over the croissants. Refrigerate overnight. Remove the croissants from the refrigerator 30 minutes before baking and preheat the oven to 350. Bake the croissants for 15 minutes, then spoon the remaining marmalade mixture on top and sprinkle with the toasted almonds. Continue baking for an additional 5 to 10 minutes, until the egg mixture is set. Serve hot, garnished with strawberries or raspberries and mandaring orange slices.
