Saute onions in butter until soft. Remove from heat. Stir into a mixture of artichokes, parmesan, mayo, red peppers, pepper & parsley. Pour into greased quich dish or pie plate. Sprinkle with remaining 2 tablespoons of parmesan. Bake at 350 degrees for 20 minutes or until heated through. Serve with crackers Can be made up to 24 hours ahead of time.
