Gingerbread Chocolate Chunk Cookies

Ingredients

  • 1/2 cup unsalted butter, room temp
  • 3/4 cup dark brown sugar
  • 3/4 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp all spice
  • 1 tbsp finely chopped candied ginger (2)
  • 1 tbsp finely chopped fresh ginger
  • 1/4 tsp salt
  • 1/4 cup molasses
  • 1 egg
  • 2 cups flour
  • 4 oz bittersweet chocolate, coarsely chopped ( 2rows)

Preparation

Step 1

Preheat oven to 375
Line 2 baking sheets with parchment paper
Cream butter, sugar, baking soda, ground ginger, cinnamon, allspice, candied ginger, fresh ginger and salt until light and fluffy
Beat in the molasses and egg; mix well
Gradually beat in flour. Stir in the chocolate by hand
Drop the dough by rounded tespoons onto the prepared baking sheets, spacing them about 1 1/2" apart
Bake until bottoms are lightly browned, about 8 -10 mins
