  • 1 lb. Italian sausage
  • 1/2 cup of chopped, green belle pepper
  • 1 medium onion, chopped
  • 1 can (14.5 oz.) Diced tomatoes
  • 2 cups vegetable juice
  • 1 1/2 cups instant, white rice
  • 1 cup of shredded mozzarella cheese

Preparation

Step 1

In a large skillet, cook sausage for about 4-6 minutes. Drain excess fat. Add green belle pepper and onion, cook until crisp. Add the diced tomatoes and vegetable juice; cook and stir until mixture boils. Remove from heat and stir in the rice. Cover and let stand for 6-8 minutes or until liquid is absorbed. Sprinkle with the cheese, cover and let stand until cheese is melted.
