Ingredients

  • 1 1/2 # 80/20 Ground Chuck
  • 1/4 C Fresh Parsley Minced
  • 1 t Sea Salt
  • 1/2 t Black Pepper
  • XX
  • 2 T Flour
  • 1 T EVOO
  • 2 T Butter
  • XX
  • 2 T Shallot Minced
  • 2 C Yellow Onion Sliced
  • 1 T Sugar
  • XX
  • 1 T Garlic Minced
  • 1 T Tomato Paste
  • XX
  • 2 C Beef Stock
  • 1/4 C Red Wine
  • 3/4 t Sea Salt
  • 1/2 T Thyme
  • XX
  • Fresh Parmesan Grated
  • 1/2 T Fresh Parsley Minced

Preparation

Step 1

Medium Bowl Add Meat, 1/4C Parsley, 1t Salt & 1/2t Pepper. Mix Well & Divide Into 4- 6oz Patties 1" Thick.

Place Flour in Shallow Dish & Dredge each Patty.

Large Skillet Medium Heat, Add EVOO, Butter & Patties. Saute 3- 5 Minutes Each Side until Brown. Remove & Keep Warm.

Add Shallot, Onions & Sugar to Skillet, Saute 5 Minutes. Stir in Garlic & Tomato Paste, Saute 1 Minute until Paste Browns.

Add Stock, Wine, 3/4t Salt & Thyme. Add Patties Bring to a Boil. Reduce Heat to Low, Cover & Simmer 10 Minutes.

Serve Hot & Garnish with Parsley & Parmesan.
