Bacon Wrapped Chicken with Blue Cheese

Ingredients
- 4 pieces boneless skinless chicken breast
- salt and freshlty ground black pepper
- 1 cup blue cheese crumbles
- Drained Spinach
- 4-8 slices bacon
- 1 tbsp EVOO
- 2 tbsp butter
- 2 tbsp flour
- 1 cup chicken stock
- 1/2 cup half and half cream
- 2 tbsp grainy mustard
- toothpicks

Step 1
Heat the oven to 375.
Butterfly the chicken breast. Open the breasts up and pound lightly. Season with salt and pepper.
Cover the seasoned chicken cutlets with blue cheese crumbles, and spinach in equal amounts. Roll the chicken, wrap each roll with bacon and secure with toothpicks. Season the outside with salt and pepper.
Heat olive oil in skillet over medium high heat. Brown the chicken evenly all over 5-6 mins. Transfer the chicken to a samll baking sheet, place in oven and cook 10 mins more.
Melt the butter in the same skillet pan. Whisk in flour, cook 1 min then whisk in stock. Let thicken a minute then whisk in cream and mustard, season with salt and pepper, reduce heat to warm.
Remove toothpicks and place sauce over chicken.
