Ingredients

  • 2 large eggs
  • 3/4 cup blended pineapple(whip unsweetened canned pineapple and juice in a food processor or blender until smooth)
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 1/4 tsp orange extract
  • 2 1/3 cups unbleached white flour
  • 1 tsp baking soda
  • 2 tsps baking powder
  • 1/2 tsp cinnamon

Step 1

Beat together eggs, blended pineapple, oil, milk, and orange extract.
Add flour, baking soda, baking powder, and cinnamon. Beat well. Spoon into two oiled and floured round 9 x 1 1/2 baking pans. Spread batter evenly in pans. Bake at 350 degrees for 15 minutes or until browned and a knife inserted comes out clean. To serve, spread pudding between and over cake layers. Garnish with fresh fruit.
