Ingredients
- 4 cups grape tomatoes
- 1 teaspoon fresh ground black pepper
- 3 tablespoon extra virgin olive oil
- 3 garlic cloves, peeled
- 2 teaspoon course kosher salt
Preparation
Step 1
Preheat oven to 400°F
Drizzle 3 tablespoons olive oil over the grape tomatoes and 3 garlic cloves and sprinkle with salt, pepper. Pour the tomatoes and garlic cloves in a 9x13" glass-baking dish, in just one layer. Roast 20 minutes, and then stir. Add 2-3 tablespoons of hot water if too dry in appearance.
Return to oven and cook 20-30 more minutes. When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven as an amazing side dish to my blue cheese butter stuffed filets. Yummy!
NOTE:
If tomatoes are not in season, add a pinch of sugar to help bring out that sweetness as in an in-season grape tomato.
