Raspberry Mojitos

Ingredients

  • 1 cup fresh raspberries
  • 1/3 cup sugar
  • 12 mint leaves
  • Juice of 1/2 lime
  • 8 tsp sugar
  • 1/4 cup light rum
  • Crushed ice
  • 4 splash of club soda

Preparation

Step 1

1. Bring 1 cup raspberries and 1/3 cup sugar to boil in small pan. Cook for 10 mins, stirring occasionally. Press through a strainer to remove seeds.

2. Put three mint leaves, one fourth of the lime juice and 2 tsp sugar in each of four glasses; crush mint with a spoon. Add 1 tbsp of the rum and 1 tbsp of the raspberry syrup to each glass and mix well. Add crushed ice and a splash of club soda to each and stir to mix. Garnish with skewered fresh raspberries, lime wedges and additional mint leaves.
