Stuffed Bell Peppers

Ingredients

  • 3 medium red bell pepper
  • 1 pound sweet Italian turkey sausage
  • 1/4 cup italian seasoned bread crumbs
  • 1/3 cup fresh parsley; minced
  • 1 small egg
  • 1 medium zucchini; grated
  • 1/2 cup red onion; finely chopped
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon sea salt

Preparation

Step 1

Preheat oven to 350°F. Halve peppers lengthwise, remove seeds and membrane.

Mix next 9 ingredients in bowl until well blended.

Fill pepper halves with sausage mixture, dividing equally and mounding
slightly.

Arrange in a baking dish (can be made one day ahead, cover and chill).

Bake peppers uncovered about one hour.
