Ingredients

    Tbsp olive oil

  • 1

    small onion chopped (about 1/2 cup)

  • 2

    garlic cloves, finely chopped

  • 1

    lb ground chuck

  • 1

    lb ground pork

  • 1

    lb ground veal

  • 2

    large eggs, lightly beaten

  • 1

    cup plain dry bread crumbs

  • 1

    Tbs tomato paste

  • 1/4

    cup chopped fresh parsley

  • 2

    Tbs chopped fresh thyme

  • 1

    Tbs chopped fresh rosemary

  • 2

    tsp salt

  • 1/2

    tsp fresh ground pepper

Directions

1. Preheat the oven to 325. Heat oil in a medium skillet over medium low heat. Add onion and garlic and cook, stirring occasionally, 10 minutes or until the onion is tender. 2.Combine the onion mixture, ground chuck and next ten ingredients in a large bowl. 3. Divide mixture in half, shaping meat mixture firmly into 2 (7 1/2 x 3) loaves, about 1 1/2 inches thick. Place loaves on broiler pan. 4. Bake at 375 for 45 minutes or until meat thermometer registers 160. Let stand for 10 minutes before thinly slicing.
