Ingredients

  • 1/4 cup best life butter, softened
  • 1 teaspoon pure vanilla extract
  • 1/2 cup splenda
  • 2 cups WW pastry flour
  • 1/2 cup eggbeaters {122g}
  • 2 teaspoons baking soda
  • 2 very ripe bananas, mashed with a fork
  • 1/2 teaspoon cinnamon
  • 1/2 cup buttermilk {4.25oz}
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat oven to 350°F.

Cream together butter and splenda.

Add eggbeaters and mix well. Add remaining ingredients and mix well.

Pour into 1 greased bread loaf pan {4.5x8.5” would be preferable 5x9” will work but the loaf don’t rise as high}

Bake 1 hour and let cool slightly before removing from the pan and cooling on a wire rack.
