Ingredients
- 3 tablespoons fresh lemon juice
- 3 teaspoons lemon zest
- 1 tablespoon poppy seeds, plus extra for sprinkling
- 1/3 cup raw honey
- 1/2 cup creamy almond butter
- 1/2 cup coconut flour
- 1 egg
- 1 teaspoon baking powder
Preparation
Step 1
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.
In a bowl, blend all ingredients until smooth.
Spoon tablespoons of batter about 1/2 inch apart (these cookies don’t spread when cooking). Sprinkle with more poppy seeds as desired.
Bake for 10 minutes. Let rest for at least 30 minutes.
