Ingredients
- 1 cup halved cherry tomatoes
- 1/2 long baguette, cubed {slightly stale}
- Kosher salt and fresh ground black pepper
- 2 teaspoons Dijon mustard
- 1 cups cooked great Northern white beans
- 1 tablespoon balsamic vinegar
- 1 can light tuna, oil packed, drain
- 3 tablespoons olive oil
- 1 shallot, thinly sliced
- 2 Tbsp. rough chop fresh basil or oregano
- 1/4 cups sliced pitted kalamata olives
Preparation
Step 1
In medium serving bowl, add tomatoes and season with salt and pepper to taste. Let sit 10 minutes before adding beans, tuna, shallots and olives.
Just before serving, mix in bread cubes and combine gently.
In a small bowl, whisk together mustard, vinegar and salt and pepper to taste. Drizzle in oil, whisking to blend. Pour over the salad just before serving. Add basil and toss. Taste for seasoning before serving.
