Salmon Patties

  • ...1/2 cup finely chopped red onion
  • 2 scallions finely chopped
  • 1/4 cup thinly sliced fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 can (6 1/2 ounces) salmon drained and flaked
  • 1/2 teaspoon paprika
  • 1/8 cup mayonnaise
  • 1 tablespoon hot pepper sauce
  • 1 large egg white
  • Cooking spray (optional)
  • 1 Avocado sliced

Preparation

Step 1

1. Combine first 8 ingredients in a large bowl.
2. Combine hot pepper sauce and egg white in a small bowl.
3. Add egg white mixture to salmon mixture, stirring well to combine.
4. Divide the mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.
5. Spray rack with non-stick cooking spray.
6. Place patties on 4 inch rack and grill on power level HI for about 10 minutes. No need to flip.
7. Serve on buns garnished with avocado or additional basil.

Tip:
To spice it up add 1/4 teaspoon of Old Bay Seasoning to ingredients in with the first 8 ingredients.
For a healthier twist serve on lightly toasted Focaccia bread. Place on the 4 inch rack and toast for about 4 minutes.
