Ingredients
- 1 onion, chopped
- 1 Tablespoon butter
- 1 can corn (about 1 pound), drained--but reserve liquid
- 1 teaspoon sugar
- salt and pepper
- 3 eggs
- enough milk to make 1 1/2 cups of liquid when added to the liquid
- from the corn
Preparation
Step 1
Cook the onion slowly in the butter until soft but not brown. Remove from the heat and mix with the corn, sugar, salt and pepper. Beat the eggs lightly with the milk--just until it is all one color, with no streaks of egg. Add to the corn mixture. Pour into a greased casserole in a pan of water and bake in a 325 degree oven until set--about an hour for a shallow casserole, longer for a deep one.
